Guinness Beef Stew Recipe

The Guinness Beef Stew was the bestseller at The Soupery, a soup bar that I used to own prior to having a baby. So yes, this recipe is my trade secret and I’m revealing it to you today. It is wholesome and hearty, just perfect for rainy days, or a day of sitting indoor in air-conditioned room. Or just because you felt like it.
This recipe yields 8 main servings.
Ingredients:
1 tablespoon olive oil
4 medium red onions, chopped
4 carrots, chopped
4 sticks of celery, chopped
600g beef (I usually use rump or chuck tender), diced into 1 inch cubes.
2 tablespoon plain flour
4 potatoes, chopped
2 cans of canned chopped tomatoes
2 tablespoon tomato paste
1 dried bay leaf
½ tsp dried thyme
½ tsp paprika
1 can Guinness Stout, or
2 dash worcestershire sauce
200g button mushrooms, chopped
salt and pepper to taste
Instructions:
  1. In a bottom heavy pot over medium heat, pour in olive oil and add the onions. Fry for 3 to 4 minutes until onion turns translucent.
  2. Toss in the meat and flour. Stir to coat.
  3. Add in carrots, celery, chopped tomatoes, puree, mushroom, paprika, bay leaf, thyme and fry for 2-3 minutes.
  4. Add stout or a dash of worcestershire sauce for a smoky taste.
  5. Add about 1 litre water. Add potatoes. Put the lid on and bring to a boil.
  6. Lower down the fire and let simmer for at least 2 hours.
  7. Stir the bottom from time to time to avoid burning the thick stew.
  8. To test  if it is ready, mash up a piece of meat. If it falls apart easily, it is ready.
  9. Enjoy with bread or rice!
