For those who know what Mulligatawny is probably first heard of it through the Soup Nazi episode of Seinfeld. It is Kramer’s favourite soup and it’s not hard to understand why. Mulligatawny is a delicious blend of vegetables, herbs and spices. Don’t let the long list of ingredients deters you from making this satisfyingly hearty and filling meal in a pot. It is super easy to make.
This recipe yields more than 2 litres, so freeze the rest and warm it for quick lunch or dinner over the next few days.
120g sweet potato
2 carrots, peeled & sliced
2 stalks celery, with tops
1 zuchini, cubed
1 medium onion, chopped
1 cup frozen corn
1/2 cup roasted red pepper, diced
1/2 cup chopped Italian parsley
1/4 cup lemon juice
1 tablespoons sugar
1/4 teaspoon curry powder
1/4 teaspoon thyme ¼ tsp
Instructions:
- Combine all ingredients in a very large pot.
- Bring to a boil, then reduce heat and simmer, uncovered, for about 1 hour or until soup has reduced by more than half.
- Stir occasionally for the first few hours, but stir often in the last hour to prevent the mixture from sticking to the bottom of the pot.
- Serve with rice or toasted sliced baguette. Dig in!
Oh my, the Soup Nazi episode does bring back memories! It is a shame I don't like celery or curry powder because that looks like a fun meal ..
